How to Cook It:

The Basic Way –  Simple Millet Dalia with Ghee & Salt

Ingredients:

  • ½ cup Just Organik Multi Millet Melange Dalia
  • 2 cups water
  • 1 tsp ghee
  • Salt to taste

Instructions:

  1. Rinse the dalia well in water 1–2 times.
  2. In a pan or pressure cooker, heat ghee and add the dalia.
  3. Dry roast for 2–3 minutes on low heat to bring out aroma.
  4. Add water and salt. Pressure cook for 2–3 whistles or simmer in a covered pan till soft.
  5. Serve hot as is or with a bowl of curd/pickle.

1. Desi Tempered Dalia (Masala Upma Style)

Ingredients:

  • ½ cup Multi Millet Melange Dalia
  • 1 chopped onion
  • 1 chopped tomato
  • 1 chopped green chilli
  • 1 tsp mustard seeds
  • 1 tsp cumin seeds
  • 1 tbsp ghee
  • Curry leaves, salt, turmeric

Method:

  1. Heat ghee, splutter mustard and cumin.
  2. Add green chilli, curry leaves, onion—sautĆ© till golden.
  3. Add tomato, salt, turmeric. Cook till soft.
  4. Stir in rinsed dalia. Mix well.
  5. Add 2 cups water. Cook until soft and fluffy.
  6. Garnish with coriander and a squeeze of lemon.

2. Millet Handvo-Inspired Savory Cake (Pan-Cooked)

Ingredients:

  • ½ cup cooked Multi Millet Melange (cooled)
  • ¼ cup curd
  • ¼ cup grated bottle gourd (lauki)
  • 1 tbsp besan (optional)
  • ½ tsp baking soda
  • Green chilli-ginger paste, salt
  • Mustard, sesame, curry leaves (for tempering)

Method:

  1. Mix cooked dalia with curd, lauki, besan, salt, soda, and paste.
  2. Let it sit for 10 mins.
  3. Heat a nonstick pan, add tempering of mustard-sesame-curry leaves.
  4. Pour in batter like a thick pancake. Cover and cook both sides on low heat till golden brown.
  5. Slice and serve with mint chutney.

Ingredients:

  • ½ cup Multi Millet Melange
  • ¼ cup moong dal
  • 1 tsp black pepper

  • 1 cup mixed chopped vegetables (carrot, beans, capsicum)

  • 1 tsp garam masala
  • 1 tbsp ghee or oil
  • Salt

Method:

  1. SautƩ whole spices in ghee. Add onion, cook till soft.

  4. Pour 2 cups water. Pressure cook for 2 whistles or simmer till water is absorbed.
