- Add vegetables, spices, salt, and baking soda to the batter and mix well.
- In a non-stick pan or Handvo pan, heat oil. Add mustard seeds, cumin, hing, and sesame seeds.
- Pour the batter over the tempering and cook covered on low flame for 10–12 minutes, or till the bottom is crisp and golden.
- Flip carefully or finish off in the oven at 180°C for 15 minutes.
- Cool slightly and cut into wedges. Serve with coriander chutney or pickle.
